This recipe was adapted from This Recipe from Whole Foods.. but it's my version of a nice healthy recipe gone BAD!
Ingredients
1 1/2 cups flour
1 cup coarse graham cracker crumbs
1 cup coarse graham cracker crumbs
1/2 cup finely chopped pecans
1/2 cup sugar
1 tsp cinnamon
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1)sweet potato, peeled and grated
3 tablespoons butter softened
1 tsp cinnamon

1/2 teaspoon salt
1)sweet potato, peeled and grated
3 tablespoons butter softened
3/4 cup plain yogurt
2 eggs
2 eggs
1 tsp vanilla
In a bowl mix flour, graham crackers, sugar, cinnamon, baking powder, baking soda and salt.
Then grate the sweet potato into the mixture.
Then mix together and add pecans.
In your mixer, mix yogurt and butter.\
Add one egg at a time and mix.
Then add vanilla.
Then add the dry ingredients to the wet
and fold together.
Put into a loaf pan
and cover with with cinnamon and pecans.
Bake at 375 degrees for one hour or until the knife comes out clean.
This was soo yummy and we served with a little spread of cream cheese!
