Happy Monday!  I was totally blown away this week by all the talent floating around my blog.. and it wasn't even mine!  I am headed to Australia this morning.. No not literally although it owuld be nice!  I will be there for the next two days for the cultural fair for my kids school.  And seeing as how I spent my entire weekend there I will not be posting any favorites today.. but check in with me on Wednesday to see my favorites. 

Now enough about me.. let's talk about you!  Show me whay you were busy creating this week!

Morning Glory Muffins!

Good morning Sunshine! What better way to start the day than with these sunny Morning Glory Muffins?!?

Ingredients

 

4 cups all-purpose flour

2-1/2 cups white sugar

1 tablespoon and 1 teaspoon baking soda

1 tablespoon ground cinnamon

1 teaspon ground nutmeg

1/2 teaspoon salt

4 cups shredded carrots

1 cup craisins

1-1/3 cups sunflower seeds

1 cup sweetened flaked coconut

2 apple - peeled, cored and shredded

6 eggs

1 tablespoon vanilla

2 cups vegetable oil

Start by shredding the carrots into a measuring cup (makes life soo much easier!). I used the finer shred for a more delicate muffin.

Then mix the craisins, sunflower seed, coconut and apple into the shredded carrots and set aside.

In your mixer combine the flour, baking power, ground cinnamon, ground nutmeg and salt.

Then add the carrot mixture.

In a separate bowl combine the eggs, oil and vanilla.

Then add to the carrot flour mixture.

Mix until just combined.. you can do it.. Mix for a bit and then WALK AWAY!

Pour into muffin pans and bake at 350 for 25 minutes.

This recipe made 5 giant muffins (which Mr. Pinkapotamus cut in half and slathered with cream cheese to make a morning glory sandwich) and 23 standard size.

Oh yum!

And this my friends is muffin happiness!

Cereal Box Purse!

Okay.. sometimes I get a little bored and I craft silly things that I am probably NEVER going to use.. but its one way to keep me occupied and out of trouble (aka shopping for more craft supplies).  So this morning I was toying with an empty cereal box and decided that it would make a really cute purse. 

So I cut the cereal box into the desired shape.  Then wrapped it in fabric which I glued with fabric glue and then added some cute fabric rosettes. 

Stuffed it with tissue paper and thought it would make an adorable centerpiece for a girly party or baby shower!

Work in Progress Wednesday!

First I want to express my total EXCITEMENT that I am 1 follower away from 300!  Whoo hoo!  How did this happen?  I am soo grateful to all of you for taking the time to follow my little blog and for commenting and coming back week after week to share your awesome projects! 

This week I am knee deep in work on a special project for my kids... Cultural Awareness week!  My continent this year is Australia which I am working on with several other talented, dedicated women.  My job is to recreate the GREAT Barrier Reef.  So here is what I have accomplished so far..

And of course no reef would be complete without a Shark!

Oh well.. back to work for me!  A mother's work is NEVER done!

Pink Hippo Party #23

Happy Monday All!  This weekend was super busy with the start of baseball season and work on the Cultural Fair at my kids school.  This means not much time crafting .. but more time constructing and painting as I am creating a cardboard Great Barrier Reef!  Stay tuned .. pics to follow !  In the meantime, here are my crafty favorites from last week!

Suck it Mother Nature!

That's right you heard me.. I said Suck it!  Now I am normally a nice girl who doesn't say such things .. but sometimes you just have to say how you feel and THAT is how I feel on this April Fool's Day.. Like Mother Nature is playing a cruel joke on us poor New Jerseyians.. promising Spring but dumping us with SNOW and temps in the 30's for April Fool's Day!  Uggh.. well here is what I have to say to you Mother Nature.. (besides suck it of course).. now remember to READ this in your best taunting voice please!
