Morning Glory Muffins!

Good morning Sunshine! What better way to start the day than with these sunny Morning Glory Muffins?!?

Ingredients

 
4 cups all-purpose flour
2-1/2 cups white sugar
1 tablespoon and 1 teaspoon baking soda
1 tablespoon ground cinnamon
1 teaspon ground nutmeg
1/2 teaspoon salt
4 cups shredded carrots
1 cup craisins
1-1/3 cups sunflower seeds
1 cup sweetened flaked coconut
2 apple - peeled, cored and shredded
6 eggs
1 tablespoon vanilla
2 cups vegetable oil

Start by shredding the carrots into a measuring cup (makes life soo much easier!). I used the finer shred for a more delicate muffin.

Then mix the craisins, sunflower seed, coconut and apple into the shredded carrots and set aside.

In your mixer combine the flour, baking power, ground cinnamon, ground nutmeg and salt.

Then add the carrot mixture.

In a separate bowl combine the eggs, oil and vanilla.
Then add to the carrot flour mixture.
Mix until just combined.. you can do it.. Mix for a bit and then WALK AWAY!
Pour into muffin pans and bake at 350 for 25 minutes.


This recipe made 5 giant muffins (which Mr. Pinkapotamus cut in half and slathered with cream cheese to make a morning glory sandwich) and 23 standard size.

Oh yum!
