Double Chocolate Peanut Butter Cookies and a Tribute

In the wake of this terrible tragedy I would like to dedicate this post to the families of those beautiful children who were taken too soon and to the families of the heroic teachers who made the ultimate sacrifice for their "kids".
May you find comfort and strength and know that you are in our thoughts and prayers always.  
This post is to show my support.

Double Chocolate Peanut Butter Cookies

Ingredients
1 Cup Peanut Butter 
1 Stick Butter
1 1/4 cups Dark Brown Sugar
2 Eggs 
1 Tsp Vanilla
1 3/4 Cups Flour
2 Tbls Cocoa Powder
3/4 Tsp Baking Soda
1/2 Tsp Salt
1/2 Cup Oats 
1 Cup Chocolate Chips
Sorry no pics on this one as I was making these at 3 am. 
In mixer cream together peanut butter, butter and sugar.  Once combined add eggs one at a time and vanilla.
In a separate bowl, combine flour, baking soda and salt.  Add to wet ingredients.  Continue mixing and add oats and chocolate chips.  
Then use your cookie scoop and place on cookie sheet 2 inches apart.  Bake at 350 degrees for 10 minutes. 
Let cool on baking rack and Enjoy!
Don't forget share the kids you love and give them an extra squeeze for me!

Chocolate Chip Scones

Tis the season to start baking.. 
fa la la la la la LAAAAAAA!  
So here is the beginning of my baking for the Christmas Season.. 
Chocolate Chip Scones

Ingredients
2 Cups Flour
1/2 Cup Sugar
1 tsp Baking Powder
1/4 tsp Baking Soda
1/2 tsp Salt
1 Stick Butter, Frozen
Zest of 1 Lemon
1/2 Cup Chocolate Chips
1/2 Cup Chocolate Chunk Chobani Yogurt
1 Egg
1 Tsp Vanilla
Sprinkle of Sugar 

Preheat oven to 400 degrees.
In a large bowl whisk together flour, sugar, baking powder, baking soda and salt. 
Grate frozen butter
and lemon zest into flour mixture. 
Mix in chocolate chips.
In a separate bowl 
combine yogurt, egg and vanilla.
Pour yogurt mixture into dry ingredients.
Mix with a fork until crumbly.
Then use your hands to form a large ball.
Break dough into equal balls 
and bake in a greased scone pan.  Sprinkle with sugar.
Bake at 400 degrees for 15 - 18 minutes until golden brown.
Viola!  Beautiful Scones to Share with someone you love!

Puffed Cranberry Walnut Granola

As my kids tell me.. I am a bit of a health food junkie!  
So here are some yummy granola I created after buying some deliciously overpriced bars!

Puffed Cranberry Walnut Granola
Ingredients
1/2 cup butter
1/2 cup brown sugar
1/2 cup honey
1 tsp vanilla
2 cups puffed rice
2 cups puffed wheat
1 1/2 cups pecans
1 cup dried cranberries
In a small saucepan melt butter.  
Add brown sugar, honey and vanilla and bring to a boil.
In a separate bowl combine puffed rice, wheat, pecans and dried fruit. 
Pour liquid over dry ingredients and mix.  
Put mixture into a greased baking pan and bake at 350 degrees for 15 minutes.
Then eat and enjoy with yogurt
or as a popable hand snack!

Pumpkin Banana Bread

Have your bananas gone rotten?  Are they just BEGGING to be made into banana bread?  Well why not make some delicious Pumpkin Banana Bread.. Yum!

Ingredients

3 overripe bananas
2 eggs
1/3 cup canola oil
1 1/2 cups pumpkin
1/2 cup honey
1/2 cup white sugar
2 tsps vanilla
2 1/2 cups flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
2 tsps pumpkin pie spice

Start by combining bananas, eggs, oil, pumpkin, honey, sugar and vanilla in your mixer.
In a separate bowl combine flour, baking power and soda, salt and pumpkin pie spice.  

Add the wet to the dry ingredients.
Mix.
Pour into two loaf pans
 and bake at 350 degrees for 1 1/2 hours
 or until your knife comes out clean from the center.
Then share
and enjoy!
