Guest Post and Giveaway: Mindie May Hilton


I am so excited to share with you all at Pinkapotamus my Give Away and Saint Patrick's Day Pancake Recipe! Let me introduce myself. My name is Mindie May Hilton and I am the blogger of Bacon Time with the Hungry Hungry Hypo. That's me, the hungry hungry hypoglycemic. My husband and I have two beautiful boys, Joshua 8 and Lucas who is almost 2. I love my crazy domestic life so much that I decided to start blogging about it all. Today I have decided to share with you all a wonderful recipe for a kid friendly Saint. Patrick's Day brunch. We are going to make Shamrock & Pot of Gold Pancakes. Of course you could use any recipe you like for the pancake batter but here is one of my own personal and favorite recipes.


1 1/2 cup(s) All Purpose Flour (unsifted)

3 1/2 teaspoon(s) Baking Powder

3/4 teaspoon(s) Salt

1 tablespoon(s) White Sugar

1 1/4 cup(s) Milk (I used fat free)

1 large egg (I used 1/4 cup of cholesterol free egg product)

2 tablespoon(s) Unsalted Butter, melted

Mix the above ingredients just until combined do not over mix.

Preheat griddle to 375 F degrees.

To finish your batter for your gold coin pancakes mix 1 cup of batter with 40 drops of yellow food coloring, 1/8 tsp of Orange Extract, and the zest of one small orange. I like to pour these onto your hot griddle with a spouted measuring cup for easy pouring. You will want to make several small pancakes to represent the pot of gold for Saint. Patrick's Day. When your pancake starts to bubble that is when it is time to flip and cook on the second side. My griddle is non stick so I did not need to use any oil or non stick spray but use if needed.
Mix the rest of the batter with 20 drops of green food coloring. If you have a shamrock cookie cutter more power to you. I did not, so I used a small heart cookie cutter to cut the green pancakes into hearts. For each shamrock pancake you will need 3 heart shaped pancakes and a small rectangle piece for the stem. Optional you can add some green M&Ms to the green pancakes (as I did). If you do add the green M&Ms, you will want to drop 2 or 3 into the center of each pancake before you flip it. That way when you cut them with your heart shaped cookie cutter they will stay intact.
 
This recipe should make enough to serve 4 people. I like to serve pancake syrup on the side. Clover honey on the side would also be a nice touch for Saint. Patrick's Day.

This is a great recipe to let the kids help by using the heart shaped cookie cutters for the Shamrock pancakes.
