Oh yay! So yummy and super easy! One of our family's favorite weeknight sides.
Ingredients
Stale bread cut into cubes
kalamata olives
1/2 cup - 1 cup olive oil (depending on how stale your bread is)
Juice from 2 lemons
1 large tomato
1 red onion
fresh basil
fresh parsley
feta cheese chunks
salt and pepper
Start by cubing bread, chopping veggies and squeezing lemson. Then add all of the ingredients in a bowl and mix. Set aside for atleast 15 minutes until the bread softens.
We served ours with lemon basil grilled chicken and corn on the cob.
Yum-o!
Oh yeah and the possiblilites here are endless.. basiclally if its in your fridge and about to go bad .. throw it in!
You could go Italian with mozzarella, basil, balsamic vinegar, green olives and red peppers.
You could go Mexican with black beans, corn, tomatoes , onion, green peppers, cilantro and avocado.

I love bread. Probably a little more than is healthy. And I tend to dislike most salads. But BREAD SALAD? That's a salad I can get on board with!
ReplyDeleteYou know, I don't think I've ever made bread salad....but, I think I want to!! And even better? It would be easy peasy to make this GFCF (gluten/casein free) for my kidlet without a lot of extra work. Thanks so much for blogging it as Bread Salad is now on my Need to Make list! :>
