Pumpkin Banana Bread

Have your bananas gone rotten?  Are they just BEGGING to be made into banana bread?  Well why not make some delicious Pumpkin Banana Bread.. Yum!

Ingredients

3 overripe bananas
2 eggs
1/3 cup canola oil
1 1/2 cups pumpkin
1/2 cup honey
1/2 cup white sugar
2 tsps vanilla
2 1/2 cups flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
2 tsps pumpkin pie spice

Start by combining bananas, eggs, oil, pumpkin, honey, sugar and vanilla in your mixer.
In a separate bowl combine flour, baking power and soda, salt and pumpkin pie spice.  

Add the wet to the dry ingredients.
Mix.
Pour into two loaf pans
 and bake at 350 degrees for 1 1/2 hours
 or until your knife comes out clean from the center.

  1. Ooh, I've not tried pumpkin banana bread (had walnut banana bread and plain banana bread) but it sounds delish - I'm going to pass the recipe on to my mum and get her to make me some :)

  3. This sounds good, and bananas in our house always go mushy! Not sure we do pumpkin in a can over here, I'm now trying to think of something else I can mix with the bananas!
