Extra Special Apple Oatmeal Bread!

Happy Sunday Pink Hippos!  Thought I would start.. or end your week depending on how you look at it with this delicious Apple Oatmeal bread recipe!  We made this to bring to our Church's Fifth Sunday Brunch.
Ingredients
1 1/3 cup butter
1 cup sugar
1 cup packed brown sugar
4 eggs
juice from 2 oranges
zest from 1 orange
3 1/2 cups flour
1 cup oatmeal
1 1/2 teaspoon baking soda
1/2 teaspoon salt
2 1/2 large apples peeled and chopped
1 cup raisins
1 cup chopped pecans
Cream butter and sugars. 
Then add eggs one at a time until fully incorporated.
   Add juice and apples and continue to mix.
In separate bowl combine flour, oatmeal, zest, baking soda and salt.
Mix into wet ingredients. 
Fold in raisins and pecans.
Bake 1 hour at 350 degrees.  Makes 3 loafs (I made 2 large loaves and two minis for the kids to take to school!)
Remember an apple a day keeps the doctor away.. and eaten this way makes it much more FUN!

When Life Hands You Stale Bread...

.. Make Bread Salad! 

Oh yay!  So yummy and super easy!  One of our family's favorite weeknight sides.
Ingredients
Stale bread cut into cubes
kalamata olives
1/2 cup - 1 cup olive oil (depending on how stale your bread is)
Juice from 2 lemons
1 large tomato
1 red onion
fresh basil
fresh parsley
feta cheese chunks
salt and pepper

Start by cubing bread, chopping veggies and squeezing lemson.  Then add all of the ingredients in a bowl and mix.  Set aside for atleast 15 minutes until the bread softens.


We served ours with lemon basil grilled chicken and corn on the cob.
Yum-o!
Oh yeah and the possiblilites here are endless.. basiclally if its in your fridge and about to go bad .. throw it in!
You could go Italian with mozzarella, basil, balsamic vinegar, green olives and red peppers.
You could go Mexican with black beans, corn, tomatoes , onion, green peppers, cilantro and avocado.
