Pink Hippo Party #77

Happy Monday Pink Hippos!  Another busy weekend.. but this weekend we got to have our first Lemonade Stand of the Season with lots of traffice courtesy of the estate sale across the street!

Extra Special Apple Oatmeal Bread!

Happy Sunday Pink Hippos!  Thought I would start.. or end your week depending on how you look at it with this delicious Apple Oatmeal bread recipe!  We made this to bring to our Church's Fifth Sunday Brunch.
Ingredients
1 1/3 cup butter
1 cup sugar
1 cup packed brown sugar
4 eggs
juice from 2 oranges
zest from 1 orange
3 1/2 cups flour
1 cup oatmeal
1 1/2 teaspoon baking soda
1/2 teaspoon salt
2 1/2 large apples peeled and chopped
1 cup raisins
1 cup chopped pecans
Cream butter and sugars. 
Then add eggs one at a time until fully incorporated.
   Add juice and apples and continue to mix.
In separate bowl combine flour, oatmeal, zest, baking soda and salt.
Mix into wet ingredients. 
Fold in raisins and pecans.
Bake 1 hour at 350 degrees.  Makes 3 loafs (I made 2 large loaves and two minis for the kids to take to school!)
Remember an apple a day keeps the doctor away.. and eaten this way makes it much more FUN!

Another Day.. Another Birthday Gift

Caring is sharing! 
I will keep this short and sweet!  I just adore making gifts for my kids friends.  So this moring I made this sweet name sign in purple, white and green.
I've made these lots of times, but this time I used ruffles and scrapbook paper to make it extra cute!
Hope Alexa loves it.. and happy Saturday!
Maybe next week I will get to make something for myself!

Woodland Creature Name Sign

Hey Pink Hippos!  Awhile back I hosted a giveaway for my dear friend Stacey at Boy Oh Boy Oh Boy  who is hosting a monthly boy clothes sewalong!  She is the BEST! 
Stacey's blog has some A-mazing ideas of crafting and sewing for boys.. um since she has 3 of them!

Old Frame to Mixed Media Art

If you have spent ANY time here at Pinkapotamus.. you may have come to the realization that I just
A-dore making my kids into art! 
Here is my latest example of this!
It all started with two old frames that my mom gave me (Thanks MOM!).
I started by ripping off all of the glued on pieces so I had a blank canvas.  (there are two.. I only did one so far!)
Next I added a picture of my daughter and adjusted the colors in photobucket and made her into a princess butterfly.  Cute, right?
Then I started with the background.  I cut all kinds of crazy grass shapes out of different green scrapbook papers and layered them to make a scrappy 3-d background.
Once the grass was done I painted the sky blue with several shades of blue, some purple and a highlight of white.  I also used my Martha Stewart ABC punches to create the phrase "He gave her wings so she could fly"
Next I added my girl with a real tulle tutu back into the picture along with some sweet butterflies to keep her company.
Then of course, I added it to my spring mantel.. which will be revealed.. um once I finish creating it!
In the meantime, I am just loving this my mixed media art!

Warm Arugula Pasta Salad

This was dinner!.. ohhhhh Yum!
That delicious stuff on the side is my Waaarrmmm Arugula pasta salad.. and here's how you make it!
Ingredients
3/4 lb pasta
2 cups fresh arugula
7 campari tomatoes
1/2 yellow pepper
1 can chick peas (drained)
1 cup feta cheese
Juice from 1 lemon
1/2 cup olive oil
Salt and pepper to taste
(we use smoked salt from Trader Joe's)

Start by boiling your water for the pasta.
Then cut up your tomatoes and yellow pepper.
Toss together with your arugula and chick peas.
Add drained pasta while still hot.
Top with feta cheese so that it melts. 
Sooo nice and creamy!
Now add olive oil, lemon juice and salt and pepper and toss again.
Then enjoy with some grilled chicken!
